Which Osteotome: Lambotte, Hoke or Cobb?
The Lambotte osteotome is the long-shank pattern for dense cortical bone in fracture repair and osteotomy, Hoke osteotomes run shorter for controlled work in confined fields, and Cobb osteotomes serve spinal and neurosurgical exposure. Shank length and blade width are the two variables, and the bone's density decides which matters more.

Bevel, Mallet and Blade Width
The bevel is the whole distinction. A double bevel, the osteotome, presents a symmetrical wedge, so force applied along the shank drives the blade straight into bone and splits it along the intended plane. A single bevel, the chisel, deflects toward the bevelled face, which is what you want when paring bone from a surface rather than cutting through it. Using an osteotome where a chisel belongs gouges deeper than intended; the reverse skates.
These are mallet-driven instruments, and that changes the specification. The shank must transmit impact without flexing, and the striking end must resist mushrooming across hundreds of blows, which is why blade width is chosen for the cut rather than the convenience. Narrow blades from 4mm concentrate force for precise cuts; wider blades to 16mm and beyond spread it for bulk removal.
